Paddlefish Caviar

This delicious roe comes from the Paddlefish, a fresh water, distant cousin of the Sturgeon. Paddlefish are found in the rivers that are part of the Mississippi-Missouri River complex. The eggs vary in color from a green-gray to steel-gray. They are buttery and have a smooth, earthy, silky flavor.
